Cathedral City cheddar is made from 100% fresh English milk, only ever sourced from around 330 dedicated farms in the Southwest of England. The temperate climate of this region is ideal for the production of high quality, rich creamy milk that gives the cheddar its distinctive taste. Cathedral City is produced at the award-winning Davidstow creamery on the north Cornish Coast, and is matured for between 9 and 20 months, from Mature through to Vintage, at a constant 10 degrees centigrade to allow the full flavours to develop. Cathedral City was supplied to The Late Her Majesty The Queen for over 20 years.
Cathedral City is a brand of Saputo Dairy UK, part of Saputo Inc., one of the top ten dairy processors in the world, and it is distributed exclusively by Atlante in the Italian market.
